Winemaking notes: 2003 vintage

The Chateau Garage winemakers are trying something a little different this year — we’re trying a new wine, for us …Nebbiolo.  Nebbilio is an Italian red grape known for its success in the Piedmont region where it is used to make Barbaresco and Barolo. Fermentation went very fast for the Nebbilio, maybe too fast, in fact…finishing in about 5-6 days. We used a new yeast as well. We’ll see what happens and keep you posted.

In addition to the Nebbilio, we did a Cab using grapes from the famed Rutherford bench, and also a Chard in the French method…no oak (all stainless steel) and no malolactic.  Both of these are turning out terrific so far! We really watched the oak on the Cab (we tend to over oak) and will be pulling the Cab out of the barrel this weekend (Jan. 25th, 2004).

We’ll be adding a few more specifics in the next couple of days (sugar, acid, fermentation time, etc.).

We ferment and crush in Los Altos and store the wine in Weimar (both areas being noted for winemaking as they are!) Again, see the notes in this section to see what we did (or didn’t do) and how it comes out.
